Is there an instruction book that describes the features implemented such as the colour coding of the ideograms and the strange brackets?

There's an instruction manual at pleco.com/anmanual.

The colors are associated with tones - red green blue purple for 1 2 3 4 respectively. The brackets indicate the traditional version of a word, if it differs from simplified - you can turn them off in Settings / Languages / Headword Mode.
