This old thread seems to imply that there are three or four different fonts to choose from in Pleco. However I couldn't find any fonts besides the default, built-in font.

My issue is that I would like to use a Kai style font for dictionary headwords, for both traditional and simplified characters. I can install a custom font such as BiauKai or Kaiti but they seem to support either traditional or simplified characters, but not both. Is there any font out there, besides the one built into Pleco, that supports both?

Quite a few, yes - this free project has one with pretty comprehensive coverage, IIRC, and lots of commercially available Kai fonts do too - look for one that's advertised as "GBK" or "GB18030".
