In Review Flashcards, I have different profile. In general, my profiles are related to different books.
One of them is written in traditional characters. It would be interesting if I could choose the format of presentation for a specific profile. For this specific case, I would choose trad. only.

You actually can do that now - "force character set" in "display" has "simp-only" and "trad-only" options that override your normal headword display setting.
