I think you merely need to offer them a place to do it, free of the ridiculous restrictions placed on them by other sites (such as Chowhound forbidding discussion of restaurants that have closed.)

Do you really think there's enough unhappiness at Chowhound that we could lure people away to a separate forum? I suppose having something specifically focused on Chinese food might be worthwhile for its own sake, but a lot would depend on whether we could attract the right mix of people to be moderators / frequent posters / etc.

Well, okay, if you can afford to just BUY a whole book on e subject, you hardly need peons to do the writing.

Oh we still do need peons - a book can only do so much, and Chinese menu reading is ripe for crowdsourcing given the flexible and ever-changing relationship between dishes and their names. But starting off with a useful existing work at the core really gives the project a jump start - it's tough to get people to contribute to something if it's empty and not very useful yet, it's considerably easier to get them to add or revise entries in an already-fleshed-out work. CC-CEDICT got going when the creator of the older CEDICT agreed to release his work (painstakingly developed over something like a decade) in the public domain.
